Ingredients

1 lb (450g) potato gnocchi

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 tablespoon tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.

Sauté the Aromatics: In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Prepare the Sauce: Add the diced tomatoes (with juices), tomato paste, dried basil, dried oregano, and red pepper flakes (if using) to the skillet. Stir well and let the mixture simmer for about 5 minutes, allowing the flavors to meld.

Add Cream and Gnocchi: Reduce the heat to low. Pour in the heavy cream and stir until combined. Gently fold in the cooked gnocchi, ensuring they’re evenly coated with the sauce.

Cheese It Up: Sprinkle the shredded mozzarella and grated Parmesan cheese on top of the gnocchi mixture, distributing it evenly.

Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbling and golden brown on top.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.

Enjoy your creamy, cheesy masterpiece that's perfect for a cozy dinner!
