Ingredients

8 oz fettuccine pasta

1 lb large shrimp (peeled and deveined)

2 tbsp olive oil

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

2 cups fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

      Sauté the Shrimp:

        - In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes per side, or until shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

          Prepare the Sauce:

            - In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to blister.

              Make it Creamy:

                - Lower the heat and pour in the heavy cream, stirring well to combine. Add the Parmesan cheese and mix until melted and creamy. If the sauce is too thick, you can add some reserved pasta water until you reach your desired consistency.

                  Add Spinach and Shrimp:

                    - Stir in the fresh spinach and let it wilt for about a minute. Then, return the cooked shrimp to the skillet and mix everything until evenly combined.

                      Combine with Pasta:

                        - Add the cooked fettuccine to the skillet and toss gently to coat the pasta with the creamy sauce.

                          Garnish and Serve:

                            - Serve hot, garnished with fresh basil leaves. Enjoy your Creamy Tuscan Shrimp Pasta immediately!
