Crispy Air Fryer Fish Tacos

1 lb white fish fillets (like cod or tilapia)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp paprika

1 tsp garlic powder

1 tsp chili powder

Salt and pepper to taste

8 small corn tortillas

1 cup shredded cabbage

1 avocado, sliced

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: creamy jalapeño sauce (store-bought or homemade)

Instructions
 

Prep the Fish: Rinse the fish fillets, then pat them dry with paper towels. Cut the fish into strips or bite-sized pieces, depending on your preference.

    Seasoning: In a bowl, mix the paprika, garlic powder, chili powder, salt, and pepper. Sprinkle this mixture over the fish pieces, ensuring they are evenly coated.

      Breading Setup: Set up a breading station by placing the flour in one shallow dish, the beaten eggs in a second dish, and the panko breadcrumbs in a third dish.

        Coat the Fish:

          - Dredge each piece of fish in flour, shaking off the excess.

            - Dip it into the beaten eggs, allowing any excess to drip off.

              - Finally, coat the fish with panko breadcrumbs, pressing gently to adhere. Repeat this for all fish pieces.

                Air Fryer Preparation: Preheat your air fryer to 400°F (200°C) for about 5 minutes. Lightly spray the air fryer basket with cooking spray to prevent sticking.

                  Cook the Fish: Place the breaded fish pieces in a single layer in the air fryer basket. Spray the tops with a little more cooking spray. Cook for 8-10 minutes, flipping halfway through, or until the fish is golden brown and crispy.

                    Warm the Tortillas: While the fish is cooking, warm the corn tortillas either in a dry skillet over medium heat, or wrap them in foil and place them in a warm oven for about 5-10 minutes.

                      Assemble the Tacos: Once the fish is done, place some crispy fish pieces in the center of each tortilla. Top with shredded cabbage, sliced avocado, and a sprinkle of fresh cilantro. Add a drizzle of creamy jalapeño sauce if desired.

                        Serve: Squeeze fresh lime juice over the tacos for an extra burst of flavor. Serve immediately with lime wedges on the side.
