Crispy BBQ Chicken Quesadillas

2 cups cooked shredded chicken

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup corn (canned or frozen, thawed)

1/2 cup red onion, finely diced

1/4 cup fresh cilantro, chopped (optional)

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Sour cream or guacamole, for serving

Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well coated. Add the corn, red onion, and half of the cilantro (if using) to the bowl. Stir until all ingredients are fully incorporated. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

    Assemble the Quesadillas: Lay out two tortillas on a clean work surface. Sprinkle a generous amount of mozzarella and cheddar cheese on each tortilla, covering half of the tortilla. Then, evenly distribute the BBQ chicken mixture over the cheese. Top the chicken mixture with a bit more cheese (this helps keep everything together), and fold the tortillas in half.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place a folded quesadilla in the skillet. Cook for 3-4 minutes on one side, until golden brown and crispy. Flip the quesadilla and add the remaining tablespoon of olive oil, cooking for another 3-4 minutes until the other side is also crispy and the cheese has melted.

        Slice and Serve: Once cooked, remove the quesadilla from the skillet, and let it cool for a minute before slicing it into wedges. Repeat the cooking process with the second quesadilla. Serve the crispy BBQ chicken quesadillas with sour cream or guacamole on the side, and garnish with the remaining cilantro if desired.
