2 medium-sized eggplants

1 cup all-purpose flour

2 large eggs

1/2 teaspoon black pepper

2 cups marinara sauce (for dipping)

Prepare the Eggplants: Slice the eggplants into 1-inch thick rounds. Sprinkle both sides with salt and let them sit in a colander for about 30 minutes to draw out excess moisture and bitterness. Rinse and pat dry with paper towels.
