Ingredients

10 chicken drumsticks

4 cloves garlic, minced

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

½ teaspoon dried thyme

½ teaspoon baking powder

½ cup vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

In a large bowl, combine the buttermilk and minced garlic. Add the chicken drumsticks and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

      Prepare the Coating:

In another bowl, mix together the flour, paprika, onion powder, garlic powder, salt, black pepper, cayenne pepper (if using), dried thyme, and baking powder. This will create a flavorful coating for the chicken.

          Heat the Oil:

In a large skillet or frying pan, add the vegetable oil and heat over medium-high heat until shimmering (around 350°F or 175°C). Make sure the oil is hot enough before frying to achieve maximum crispiness.

              Coat the Drumsticks:

Remove the marinated drumsticks from the refrigerator. Allow excess buttermilk to drip off, then dredge each drumstick in the flour mixture, pressing lightly to ensure an even coating. Shake off any excess flour.

                  Fry the Drumsticks:

Carefully place the coated drumsticks in the hot oil, ensuring not to overcrowd the pan. Fry for about 12-15 minutes on each side, or until golden brown and an internal temperature of 165°F (75°C) is reached. Adjust the heat as necessary to maintain the oil temperature.

                      Drain Excess Oil:

Once fried, use tongs to transfer the drumsticks to a plate lined with paper towels to absorb any excess oil.

                          Serve:

Garnish with fresh chopped parsley for a pop of color. Serve hot with your choice of dipping sauce or alongside a fresh salad!
