1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 cup breadcrumbs (panko for extra crunch)

2 large eggs

1/4 cup milk

Zest of 2 lemons

1/4 cup fresh lemon juice

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Oil for frying (canola or vegetable)

Fresh parsley, chopped (for garnish)

Prep the Chicken: In a mixing bowl, combine the cut chicken pieces with lemon juice, lemon zest, garlic powder, onion powder, paprika, salt, and pepper. Marinate for at least 30 minutes for optimal flavor.

    Set Up Breading Station: In three separate shallow dishes, place the flour in the first, beat the eggs with milk in the second, and pour the breadcrumbs into the third.

      Bread the Chicken: Remove the marinated chicken from the bowl and dredge each piece in flour, shaking off the excess. Dip it into the egg mixture, allowing any excess to drip off, and finally coat with breadcrumbs, pressing to adhere well. Repeat this for all chicken pieces.
