2 tablespoons cornstarch

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon cayenne pepper (optional, for heat)

Fresh rosemary or thyme for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Use a waffle cutter or a mandoline slicer to cut them into waffle-shaped fries. If you don’t have a waffle cutter, you can create a similar shape with a knife by cutting them into thick slices and then cutting them diagonally.

      Soak the Fries: Place the cut sweet potato fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, which creates a crispier texture when baked.

        Drain and Dry: After soaking, drain the sweet potatoes and pat them dry with a clean kitchen towel or paper towels. The drier they are, the crispier they will get.

          Toss with Seasoning: In a large mixing bowl, combine the cornstarch, olive oil, garlic powder, paprika, cayenne pepper (if using), salt, and pepper. Add the sweet potato fries and toss until they are evenly coated.

            Arrange on Baking Sheet: Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet, ensuring that they aren't touching. This allows them to crisp up nicely.
