Crockpot Chicken Enchilada Soup

Ingredients
  

1 pound boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) red enchilada sauce

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper, to taste

4 cups chicken broth

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish

Optional toppings: sour cream, avocado, tortilla chips, lime wedges

Instructions
 

Prep the Ingredients: Gather all your ingredients. Dice the onion and mince garlic.

    Layer Ingredients in the Crockpot: In the bottom of the crockpot, place the chicken breasts. Add the rinsed black beans, corn, enchilada sauce, diced tomatoes, diced onion, minced garlic, cumin, chili powder, smoked paprika, salt, pepper, and chicken broth. Stir gently to combine, making sure the chicken is submerged in the liquid.

      Cook on Low: Cover the crockpot with the lid and set it to cook on low for 6-8 hours, or high for 3-4 hours, until the chicken is cooked through and tender.

        Shred the Chicken: Once the cooking time is up, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the soup and stir to combine.

          Add Cheese: Sprinkle the shredded cheese into the soup and stir until melted.

            Taste & Adjust Seasoning: Taste the soup and adjust seasoning as necessary. Add more salt, pepper, or spices according to your preference.
