2 lbs boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (e.g., Great Northern or Cannellini), drained and rinsed

1 can (4 oz) diced green chilies

1 cup corn (frozen, canned, or fresh)

4 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp black pepper

Salt to taste

1 cup heavy cream or coconut milk (for dairy-free option)

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Optional toppings: shredded cheese, avocado slices, sour cream, tortilla strips

Instructions
 

Prep the Chicken: Place the chicken breasts at the bottom of the crockpot. Season with salt, black pepper, cumin, smoked paprika, and oregano.

    Add Vegetables and Beans: Layer the diced onion, minced garlic, drained white beans, diced green chilies, and corn over the chicken in the crockpot.

      Pour in Broth: Carefully pour the chicken broth over all the ingredients, ensuring everything is submerged as much as possible.

        Cook the Chili: Set the crockpot to low and cook for 6-8 hours, or on high for 3-4 hours. The chicken should be tender and shreddable.
