2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional for heat)

1/2 cup all-purpose flour

2 large eggs, beaten

8 small corn tortillas

1 cup shredded red cabbage

1/2 cup cherry tomatoes, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper to taste

Olive oil spray

Prepare the Avocados: Scoop out the flesh of the avocado halves, ensuring not to damage the skin. Cut the avocado into thick slices and season with salt and pepper.

    Bread the Avocados: Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second, whisk the eggs. In the third, combine the panko breadcrumbs, garlic powder, smoked paprika, and cayenne pepper.

      Coat the Avocado Slices: First, coat each avocado slice in flour, shaking off excess. Next, dip into the beaten eggs, then press into the panko mixture until fully coated.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
