Crunchy Buffalo Chicken Wraps

Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust for spice level)

Salt and pepper to taste

1/2 cup buffalo sauce (plus extra for drizzling)

4 large flour tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup shredded cheddar cheese

1/4 cup ranch dressing or blue cheese dressing

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      - In a large bowl, season the flour with garlic powder, onion powder, paprika, salt, and pepper.

        - Dredge each chicken thigh in the flour mixture, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs tightly.

          Bake the Chicken:

            - Place the breaded chicken thighs on the prepared baking sheet and lightly spray them with cooking spray to enhance crispiness.

              - Bake for 20-25 minutes, or until the chicken is cooked through and golden brown, flipping halfway through.

                Buffalo Sauce Toss:

                  - Once cooked, remove the chicken from the oven and let it rest for a couple of minutes. Cut the chicken into bite-sized pieces.

                    - In a large bowl, toss the cooked chicken pieces in buffalo sauce until well coated.
