Ingredients

1 pound fresh asparagus, trimmed

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs, beaten

1 cup Panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil spray

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Coating Stations: Set up three shallow bowls—one with flour, one with beaten eggs, and one with a mixture of Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

      Coat the Asparagus:

        a. Dip each asparagus spear into the flour, ensuring it is fully coated.

          b. Next, dip it into the beaten eggs, allowing any excess to drip off.

            c. Finally, roll the spear in the Panko mixture, pressing gently to adhere the coating well.

Arrange on Baking Sheet: Place the coated asparagus fries in a single layer on the prepared baking sheet. Ensure they are spaced apart for even baking.

Spray for Crispiness: Lightly spray the asparagus fries with olive oil to help them become golden and crispy during baking.

Bake: Bake in the preheated oven for 12-15 minutes, or until the asparagus is tender and the coating is golden brown and crunchy.

Serve: Remove from the oven and let them cool for a minute before serving. Enjoy these delicious asparagus fries hot with your favorite dipping sauce!
