2 cups fresh broccoli florets

1 cup breadcrumbs (panko or regular)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray or olive oil for drizzling

Optional: ¼ teaspoon red pepper flakes for heat

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prep the Broccoli: Steam the broccoli florets for about 2-3 minutes, just until they are tender but still bright green. Drain and let them cool slightly, then chop them into smaller pieces.

      Prepare the Mixture: In a large mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and red pepper flakes (if using). Mix well until all the dry ingredients are evenly distributed.

        Coat the Broccoli: In a separate bowl, whisk the eggs. Add the all-purpose flour to the broccoli florets and toss to coat evenly. Then, add the whisked eggs and mix until the broccoli is well coated.

          Combine: Gradually fold the breadcrumb mixture into the broccoli and egg mixture until all the florets are evenly coated with the crunchy mixture.

            Shape the Bites: Using your hands, form small balls or bites from the mixture and place them onto the prepared baking sheet, leaving a small space between each bite.
