Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon sriracha sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 teaspoon lemon juice (optional, for extra zing)

Fresh cilantro, for garnish (optional)

Instructions

Preheat Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Chickpeas: After rinsing the chickpeas, use a clean kitchen towel to pat them dry. Removing excess moisture is key to achieving that perfect crunch.

Season Chickpeas: In a mixing bowl, combine the dried chickpeas, olive oil, sriracha sauce, smoked paprika, garlic powder, onion powder, sea salt, black pepper, and lemon juice (if using). Toss everything together until the chickpeas are evenly coated with the spice mixture.

Spread on Baking Sheet: Pour the seasoned chickpeas onto the prepared baking sheet, spreading them out in a single layer to ensure they roast evenly.

Roasting: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Stir the chickpeas halfway through to help them brown evenly. Keep an eye on them in the last few minutes to prevent burning; they should be golden brown and crispy!

Cooling and Garnishing: Once roasted, remove the chickpeas from the oven and let them cool for a few minutes. The cooling will help them to crisp up even more. If desired, garnish with fresh cilantro for a pop of color and flavor.

Serve: Enjoy these crunchy sriracha roasted chickpeas as a snack on their own or as a crunchy topping for salads and bowls. Store any leftovers in an airtight container at room temperature for up to a week (if they last that long!).
