Easy Chicken and Vegetable Stir-Fry in Air Fryer

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

2 tablespoons olive oil

3 tablespoons soy sauce (low sodium recommended)

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon cornstarch (optional for thickening)

Salt and black pepper to taste

Cooked rice or noodles for serving (optional)

Sesame seeds and green onions for garnish (optional)

Marinate the Chicken: In a medium bowl, combine the chicken pieces with olive oil, soy sauce, honey, minced garlic, and grated ginger. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes to absorb the flavors.

    Prepare the Vegetables: While the chicken is marinating, wash and slice the bell peppers and prepare the broccoli and snap peas.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes. This ensures that the chicken and vegetables will cook evenly.

        Air Fry the Chicken: Place the marinated chicken in the air fryer basket in a single layer. Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking.

          Add the Vegetables: After the chicken has cooked halfway, add the bell peppers, broccoli, and snap peas to the air fryer basket. If desired, sprinkle cornstarch over the mixture for a slightly thicker sauce. Season with salt and pepper.

            Finish Cooking: Cook for an additional 8-10 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the vegetables are tender yet crisp. Shake the basket midway through.

              Serve: Carefully remove the contents from the air fryer and let it rest for a couple of minutes. Serve the stir-fry over cooked rice or noodles if desired. Garnish with sesame seeds and sliced green onions for an extra touch!
