Easy One-Pan Cheesy Turkey and Broccoli Skillet

1 lb (450g) ground turkey

2 cups broccoli florets (fresh or frozen)

1 cup uncooked quinoa

2 cups chicken broth (low-sodium)

1 cup shredded cheddar cheese (plus extra for topping)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon paprika

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1/2 teaspoon red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Season with paprika, salt, black pepper, and red pepper flakes (if using). Cook until the turkey is browned and fully cooked, breaking it apart with a spatula as it cooks, approximately 5-7 minutes.

      Add Broccoli and Quinoa: Once the turkey is cooked, add the broccoli florets to the skillet. Stir everything together for about 2 minutes until the broccoli starts to soften slightly. Then, add the uncooked quinoa to the skillet, mixing everything thoroughly.

        Add the Liquid: Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 15-20 minutes, or until the quinoa is cooked and tender and the broccoli is bright green and crisp-tender.

          Incorporate Cheese: Once the quinoa is ready, remove the skillet from heat. Stir in the shredded cheddar cheese until melted and creamy. If desired, add an extra sprinkle of cheese on top for a cheesy finish.
