Ingredients

1 pound boneless, skinless chicken breasts, thinly sliced

2 cups broccoli florets

1 bell pepper (red or yellow), sliced

3 cloves garlic, minced

1 inch fresh ginger, grated (or 1 teaspoon ground ginger)

4 tablespoons soy sauce

2 tablespoons oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and sliced green onions, for garnish

Instructions

Prep the Ingredients: Start by preparing all your ingredients. Thinly slice the chicken, chop the broccoli, and slice the bell pepper. Mince the garlic and grate the ginger.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the sliced chicken.

Cook the Chicken: Stir-fry the chicken for about 5-7 minutes, or until it is golden brown and cooked through. Season with a pinch of salt and pepper. Once cooked, remove the chicken from the pan and set aside.

Stir-Fry the Vegetables: In the same pan, add a little more oil if necessary, then add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Add the broccoli florets and sliced bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Combine Chicken and Sauce: Return the cooked chicken to the pan with the vegetables. Add the soy sauce and oyster sauce (if using), and stir to combine. Allow everything to cook for another 2 minutes.

Thicken the Sauce: Mix the cornstarch with water and pour it into the pan. Stir well and let it cook for an additional minute, until the sauce thickens slightly.

Finish: Remove from heat and drizzle with sesame oil. Adjust seasoning if necessary.

Serve: Serve hot over cooked rice or noodles and garnish with sesame seeds and sliced green onions.
