Easy Zucchini Pasta Bake

4 medium zucchinis, spiralized into noodles

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: In a large bowl, toss the spiralized zucchini noodles with a pinch of salt and let them sit for about 10 minutes. This helps to draw out excess moisture. After 10 minutes, pat the noodles dry with a clean kitchen towel.

      Mix the Cheese Filling: In a medium bowl, combine the ricotta cheese, egg, 1 cup of mozzarella, Parmesan, minced garlic, dried basil, dried oregano, salt, and pepper. Mix until well combined.

        Layer the Bake: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the zucchini noodles over the sauce, followed by half of the ricotta mixture, and then half of the remaining marinara sauce. Repeat with the remaining zucchini noodles, ricotta mixture, and marinara sauce.

          Top with Cheese: Finish by sprinkling the remaining mozzarella cheese evenly over the top.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

              Cool and Serve: After removing from the oven, let the dish cool for about 10 minutes before serving. This helps the layers set a bit. Garnish with fresh basil leaves if desired.
