Fall Crockpot Pork and Apple Stew

2 lbs pork shoulder, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

3 medium apples (such as Honeycrisp or Granny Smith), peeled and diced

3 medium carrots, sliced

2 medium celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon ground cinnamon

1 bay leaf

Salt and pepper, to taste

2 tablespoons apple cider vinegar

1 tablespoon maple syrup (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sear the pork: In a large skillet over medium-high heat, add olive oil. Once hot, add the cubed pork shoulder in batches, searing until browned on all sides. Transfer to the crockpot.

    Sauté aromatics: In the same skillet, reduce heat to medium and add the chopped onion and garlic. Sauté for about 3-4 minutes until softened and translucent. Add to the crockpot with the pork.

      Add remaining ingredients: To the crockpot, add the chicken broth, diced apples, sliced carrots, sliced celery, thyme, rosemary, cinnamon, bay leaf, apple cider vinegar, and maple syrup, if using. Stir to combine well.

        Season: Add salt and pepper to taste, mixing all ingredients thoroughly.

          Cook: Cover and cook on low for 6-8 hours or on high for 4-6 hours, until the pork is tender and the flavors have melded beautifully.

            Finish and serve: Once cooked, remove the bay leaf. Taste and adjust seasoning if needed. Ladle into bowls and garnish with fresh parsley if desired.
