2 medium cucumbers, thinly sliced

1 large pomegranate, seeds removed

1 cup cherry tomatoes, halved

1/2 red onion, finely sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup walnuts, roughly chopped

1/4 cup fresh parsley, chopped

2 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper, to taste

Prepare the Vegetables: Begin by slicing the cucumbers thinly and halving the cherry tomatoes. Finely slice the red onion, making sure to separate the rings.

    Collect Pomegranate Seeds: Cut the pomegranate in half and gently tap the outer skin with a wooden spoon to release the seeds. Alternatively, you can submerge the pomegranate half in a bowl of water and gently pry out the seeds—this prevents the juice from splattering.

      Mix the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Adjust seasoning to taste.
