Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional, for heat)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon cornstarch (for extra crispiness)

Fresh parsley for garnish (optional)

Instructions

Prepare the Sweet Potatoes:

    - Begin by thoroughly washing and peeling the sweet potatoes. Cut them into evenly sized fries, about 1/4 inch thick, to ensure even cooking.

      Soak the Fries:

        - Place the cut sweet potatoes in a bowl of cold water and let them soak for at least 30 minutes (this helps to remove excess starch and contributes to their crispiness). After soaking, drain the fries and pat them dry with paper towels.

          Season the Fries:

            - In a large mixing bowl, combine the olive oil, garlic powder, paprika, cayenne pepper (if using), salt, black pepper, and cornstarch. Toss the dried sweet potato fries in this mixture until they are evenly coated.

              Preheat the Air Fryer:

                - Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure that the fries start cooking immediately upon entering the fryer.

Air Fry the Sweet Potato Fries:

                    - Place the seasoned sweet potato fries in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding. Set the air fryer to cook for 15-18 minutes, shaking the basket halfway through to ensure even cooking. The fries should be golden brown and crispy.

                      Serve:

                        - Once cooked, remove the fries from the air fryer and let them cool for a minute. Optionally, sprinkle with fresh parsley for garnish. Serve immediately with your favorite dipping sauce, like garlic aioli or spicy ketchup.
