Ingredients

2 cups fresh cherries, pitted

1 cup dark chocolate chips (or milk chocolate, if preferred)

1 tablespoon coconut oil

1 teaspoon sea salt

1 cup shredded coconut (unsweetened or sweetened, to taste)

½ cup crushed nuts (almonds, cashews, or hazelnuts are great options)

Bamboo skewers or toothpicks

Instructions

Prepare the cherries: Start by rinsing your fresh cherries under cold water. If they aren't already pitted, carefully pit them using a cherry pitter or a small knife, and set aside.

Melt the chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring after each interval until completely melted and smooth.

Dip the cherries: Take each pitted cherry and dip it into the melted chocolate, allowing any excess to drip off. Place the chocolate-coated cherries on a parchment-lined baking sheet.

Add toppings: While the chocolate is still wet, sprinkle sea salt, shredded coconut, and crushed nuts generously over each cherry. This adds a delightful crunch and flavor.

Skewer the cherries: Once you've coated the cherries and added toppings, take a bamboo skewer or toothpick and gently skewer each cherry, leaving some space between them for presentation. This makes them easier to handle and serve!

Chill: Place the skewered cherries in the refrigerator for about 30 minutes, or until the chocolate hardens completely.

Serve: Once the chocolate is set, remove the skewers from the fridge. Arrange them on a serving platter and enjoy your delicious cherry skewers as a refreshing dessert or snack!
