Ingredients

2 cups fresh or frozen blueberries

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon lemon juice

2 cups Greek yogurt (plain or vanilla)

1 teaspoon pure vanilla extract

1/2 cup coconut cream (for added richness)

1/4 teaspoon sea salt

1/2 cup granola or chopped nuts (optional, for topping)

Instructions

Prepare the Blueberry Sauce:

    - In a small saucepan, combine the blueberries, honey or maple syrup, and lemon juice.

      - Cook over medium heat, stirring occasionally until the blueberries break down and release their juices, about 5-7 minutes.

        - Remove from heat and let cool slightly. Blend for a smoother consistency if desired, or leave chunky for texture.

          Make the Vanilla Yogurt Base:

            - In a large mixing bowl, combine Greek yogurt, coconut cream, vanilla extract, and sea salt.

              - Stir gently until fully blended and creamy.

                Layer the Mixture:

                  - Line an 8x8 inch baking dish or container with parchment paper for easy removal.

                    - Pour half of the vanilla yogurt mixture into the bottom of the dish and smooth it evenly.

                      Swirl in the Blueberry Sauce:

                        - Spoon half of the blueberry sauce over the yogurt layer.

                          - Use a knife or skewer to gently swirl the blueberry sauce into the yogurt, creating a marbled effect.

                            Add Remaining Layers:

                              - Pour the remaining yogurt mixture on top and smooth it out.

                                - Top it with the remainder of the blueberry sauce, once again swirling it slightly into the yogurt layer.

                                  Freeze:

                                    - Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours, or until set.

                                      Serve:

                                        - Once fully frozen, remove the dish from the freezer and let it sit at room temperature for a few minutes to soften slightly.

                                          - Using a sharp knife, slice into bars or squares. Top with granola or chopped nuts if desired before serving.

                                            Storage:

                                              - Leftovers can be stored in an airtight container in the freezer for up to 2 weeks.
