Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of choice)

1/4 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup fresh raspberries (plus extra for garnish)

1/4 cup dark chocolate chips (optional)

1 teaspoon vanilla extract

A pinch of salt

Instructions

Blend the Base: In a blender or food processor, combine rolled oats, almond milk, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Blend until smooth and creamy. If you prefer a chunkier texture, blend only until combined.

Fold in Raspberries: Gently fold in the fresh raspberries and dark chocolate chips (if using), making sure not to break the raspberries too much—this will create beautiful swirls in the pops.

Prepare the Molds: Pour the mixture evenly into popsicle molds. Leave a little space at the top to allow for expansion as the mixture freezes.

Insert Sticks: Place sticks into the molds, ensuring they are centered and stable. If your molds don’t come with popsicle sticks, use wooden coffee stirrers instead.

Freeze: Carefully transfer the molds to the freezer and let them freeze for at least 4 hours, or until completely solid.

Unmold and Garnish: To release the pops, run warm water over the outside of the molds for a few seconds. Carefully remove the pops. For an added touch, garnish with whole raspberries on top or drizzle melted chocolate over the frozen pops before serving.

Enjoy: Serve immediately and enjoy the refreshing combination of rich chocolate and tangy raspberries!
