1 cup coconut cream (full-fat)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup shredded unsweetened coconut

For the Pineapple Layer:

2 cups fresh or frozen pineapple chunks

1/4 cup coconut water (or regular water)

2 tablespoons lime juice

1 tablespoon honey or maple syrup (optional, adjust to taste)

For Garnish (optional):

Extra shredded coconut

Instructions
 

Prepare the Coconut Layer:

    - In a medium bowl, mix together the coconut cream, honey (or maple syrup), vanilla extract, and salt until smooth and well combined. Stir in the shredded coconut.

      Pour into Molds:

        - Pour half of the coconut mixture into a suitable silicone mold or a small baking dish lined with parchment paper. Spread it evenly. Tap the mold gently on the counter to remove any air bubbles.

          Freeze:

            - Place the mold in the freezer for about 30 minutes, or until the coconut layer is firm to the touch.

              Prepare the Pineapple Layer:

                - While the coconut layer is freezing, blend the pineapple chunks, coconut water, lime juice, and honey (if using) in a blender or food processor until smooth. Taste and adjust the sweetness as needed.

                  Pour the Pineapple Layer:

                    - Once the coconut layer is set, pour the pineapple mixture over it, spreading it evenly. Optionally, you can sprinkle a little extra shredded coconut on top for decoration.

                      Final Freeze:
