Frozen Greek Yogurt Berry Pie Pops

Ingredients
  

2 cups Greek yogurt (plain or vanilla)

1 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1/2 cup graham cracker crumbs

2 tablespoons melted coconut oil (or unsalted butter)

Pinch of salt

Additional berries for garnish (optional)

Popsicle molds and sticks

Instructions
 

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted coconut oil, and a pinch of salt. Mix until well combined. The mixture should resemble wet sand.

    Form the Base: Take about a tablespoon of the graham cracker mixture and press it firmly into the bottom of each popsicle mold to create a crust. Use the back of a spoon to ensure it's packed tightly. Place the molds in the freezer for about 15 minutes to set.

      Make the Filling: In another bowl, blend the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice until smooth and well combined. Gently fold in the mixed berries, ensuring they are evenly distributed throughout the yogurt mixture.

        Fill the Molds: Remove the crust from the freezer and carefully spoon the yogurt and berry mixture into each popsicle mold, filling them nearly to the top. Leave a little space to allow for expansion when freezing.

          Insert Sticks: If using traditional popsicle sticks, insert them into the molds, making sure they are centered. If your molds have a lid with sticks, place the lid on.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until the pops are completely solid.

              Unmold and Serve: To release the pops, run warm water over the outside of the molds for about 10 seconds. Gently pull on the sticks to remove the pops. If desired, garnish with additional berries before serving.
