Frozen Kiwi Popsicles

6 ripe kiwis, peeled and chopped

1 cup coconut water (or regular water)

1 tablespoon honey or agave syrup (adjust based on sweetness preference)

Juice of 1 lime

1/2 cup fresh mint leaves (optional, for added freshness)

Slices of additional kiwi and mint leaves for garnish (optional)

Instructions
 

Prepare the Kiwi: In a blender, combine the chopped kiwis, coconut water, honey or agave syrup, and lime juice. Blend until smooth. If you prefer a bit of texture, pulse the blender a few times instead of a full blend.

    Add the Mint: If you're using fresh mint, add the leaves to the blender and pulse a few times to incorporate them into the mixture while still keeping some small mint leaf pieces for a refreshing burst.

      Taste and Adjust: Taste the mixture and adjust the sweetness as needed by adding more honey or agave syrup. Blend again if you add anything.

        Fill the Molds: Pour the kiwi mixture evenly into popsicle molds. Leave a little bit of space at the top of each mold for expansion as the mixture freezes.

          Garnish (Optional): If desired, add slices of kiwi and a few mint leaves to each mold for a beautiful presentation.

            Insert Sticks: If your molds come with sticks, insert them gently into the center of each filled mold. If not, freeze for about an hour until slightly solid, then insert wooden sticks.

              Freeze: Place the molds upright in the freezer and freeze for at least 4 to 6 hours, or until completely solid.

                Unmold: To release the popsicles, run warm water over the outside of the molds for a few seconds or gently twist them out.
