Ingredients

4 medium lemons (juiced and zested)

1 cup water

2/3 cup granulated sugar (or honey for a healthier option)

1 cup fresh strawberries, hulled and diced

1 cup fresh blueberries

1 cup fresh diced pineapple

1 ripe banana, sliced

Fresh mint leaves (for garnish)

Instructions

Make the Lemonade Base: In a medium saucepan, combine the water and sugar (or honey) over medium heat. Stir until the sugar is completely dissolved. Once dissolved, remove from heat and let it cool for about 10 minutes.

Combine Lemon Juice: To the cooled sugar water, add the freshly squeezed lemon juice and lemon zest. Mix well until fully combined. Taste and adjust sweetness if necessary, adding more sugar or honey if desired.

Prepare the Fruit: In a large mixing bowl, combine the diced strawberries, blueberries, pineapple, and banana. Gently toss the fruit together.

Assemble the Cups: Carefully pour the lemonade mixture over the fruit in the bowl, ensuring all fruits are well coated. You can reserve a little lemonade for topping if desired.

Fill the Cups: Using small paper cups, plastic cups, or any mold of your choice, spoon the fruit mixture evenly into the cups. If using, pour a little more lemonade over the top of each cup.

Freeze: Place the filled cups in the freezer and let them freeze for at least 4-6 hours, or until solid.

Serve: Once frozen, remove the fruit cups from the freezer. Let them sit at room temperature for a couple of minutes to soften, then garnish with fresh mint leaves before serving. Enjoy your refreshing frozen lemonade fruit cups!
