Ingredients

2 ripe bananas, sliced

1 cup ripe mango chunks (fresh or frozen)

1 cup plain Greek yogurt (or your choice of yogurt)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lime juice

Pinch of salt

Optional toppings: shredded coconut, granola, chia seeds, or chopped nuts

Instructions

Prep the Fruit: If using fresh mango, peel and dice the mango into chunks. Slice the bananas and set them aside.

Blend the Base: In a blender or food processor, combine the banana slices, mango chunks, Greek yogurt, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt. Blend until the mixture is smooth and creamy. You may need to stop and scrape down the sides to ensure all ingredients are well incorporated.

Taste and Adjust: Taste the mixture and adjust the sweetness if necessary by adding more honey or maple syrup.

Fill the Cups: Spoon or pipe the yogurt mixture into silicone cupcake molds or small plastic cups, filling them about 3/4 full.

Add Toppings: If desired, sprinkle your choice of optional toppings over the yogurt mixture for added texture and flavor.

Freeze: Place the filled cups in the freezer for at least 4 hours or until completely frozen.

Serve: Once frozen, carefully remove the yogurt cups from the molds. If they are difficult to release, run warm water over the outside of the mold for a few seconds to help loosen them.

Enjoy: Serve immediately or store individual cups in an airtight container in the freezer. Enjoy your refreshing frozen mango banana yogurt cups!
