2 cups ripe mango flesh, pureed (about 2 large mangos)

1/2 cup fresh lime juice (about 4 limes)

Zest of 2 limes

1/2 cup honey or agave syrup (adjust to taste)

1/2 cup coconut cream (or full-fat coconut milk)

1/4 teaspoon salt

1 tablespoon cornstarch (optional, for a firmer texture)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Mango: Start by peeling and chopping the mangoes into small pieces. Blend the mango in a food processor until smooth. Measure out 2 cups of the puree.

    Combine Ingredients: In a mixing bowl, combine the mango puree, fresh lime juice, lime zest, honey or agave syrup, coconut cream, and salt. If you want a firmer texture, add the cornstarch here. Mix until well combined and smooth. Taste and adjust sweetness if necessary.

      Pour into a Pan: Line a 9x9 inch square baking dish with parchment paper, allowing some overhang for easy removal later. Pour the mixture into the prepared dish and spread it evenly.

        Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Let it freeze for at least 4 hours or until solid.

          Slice into Bars: Once frozen, remove the dish from the freezer. Use the parchment overhang to lift the frozen block out of the dish. Place it on a cutting board and cut into squares or bars of your desired size.

            Serve and Garnish: Serve the mango lime bars immediately or return them to the freezer until ready to serve. If desired, garnish with fresh mint leaves for an added pop of color and flavor.

              Storage: Store bars in an airtight container between layers of parchment paper in the freezer for up to 1 month.
