2 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/2 cup almond butter or peanut butter

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup fresh or frozen strawberries, diced

1/4 cup coconut oil, melted

1 tablespoon chia seeds (optional)

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Base:

    In a large mixing bowl, combine the rolled oats, shredded coconut, salt, and cinnamon (if using). Mix well.

      Mix Wet Ingredients:

        In a separate bowl, stir together the honey (or maple syrup), almond butter, melted coconut oil, and vanilla extract until smooth and well combined.

          Combine Mixtures:

            Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. If using chia seeds, add them in now and mix well.

              Fold in Strawberries:

                Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the mixture without breaking them down too much.

                  Prepare the Pan:

                    Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal later. Press the oat mixture firmly into the pan, making sure it is evenly spread out and packed down.

                      Freeze:

                        Place the dish in the freezer for about 2-3 hours, or until fully set and firm.

                          Cut and Serve:

                            Once the mixture is set, lift the bars out using the parchment paper overhang. Cut into squares or rectangles of your preferred size.

                              Storage:

                                Store the bars in an airtight container in the freezer for up to 3 months. You can easily grab one whenever you need a refreshing snack!
