4 cups of seedless watermelon, cubed

2 cups of plain Greek yogurt (or coconut yogurt for a dairy-free option)

1/4 cup of fresh lime juice (about 2-3 limes)

2-3 tablespoons of honey or maple syrup (adjust to taste)

Zest of 1 lime

Pinch of salt

Optional garnish: chopped fresh mint leaves or lime zest for serving

Instructions
 

Prepare the Watermelon: Start by removing the rind from the watermelon and cutting it into cubes. If possible, freeze the watermelon cubes for about 2-3 hours to create a thicker texture in the bars.

    Blend Ingredients: In a blender or food processor, combine the frozen watermelon cubes, Greek yogurt, fresh lime juice, honey (or maple syrup), lime zest, and a pinch of salt. Blend on high until smooth and creamy, scraping down the sides as needed.

      Taste and Adjust: Taste the mixture and adjust sweetness if necessary, adding more honey or maple syrup according to your preference.

        Pour Into Molds: Pour the watermelon-lime mixture into a silicone mold or paper-lined baking dish (about 8x8 inches works great). Smooth the top with a spatula for an even surface.

          Freeze: Cover and freeze the mixture for at least 4 hours, or until completely solid.

            Slice and Serve: Once frozen, remove the bars from the mold. If using a baking dish, let it sit at room temperature for a few minutes, then lift out using the parchment paper and cut into squares or rectangles.
