Ingredients

2 large apples (Granny Smith or Honeycrisp), cored and sliced

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ cup pecans, chopped (toasted for extra flavor)

¼ cup granola (optional, for extra crunch)

Zest of 1 lemon (optional, for brightness)

1 tablespoon lemon juice (to prevent browning of apples)

Instructions

Prepare the Apples: In a large bowl, toss the apple slices with lemon juice and half of the cinnamon. This will prevent the apples from browning and add a lovely flavor. Set aside.

Make the Yogurt Mixture: In another bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, remaining cinnamon, and lemon zest. Mix well until smooth and creamy.

Layer the Apples: Take a parchment-lined baking sheet and lay out the apple slices in a single layer. Spoon the yogurt mixture generously over each apple slice, making sure to cover them completely.

Add the Toppings: Sprinkle the chopped toasted pecans over the yogurt-covered apple slices. If desired, add a light sprinkle of granola for added crunch.

Freeze: Place the baking sheet in the freezer for about 3-4 hours, or until the yogurt has firmly set.

Serve: Once frozen, remove the apple slices from the sheet and allow them to sit at room temperature for about 5 minutes before serving. This will make them easier to enjoy. Serve as a refreshing snack or dessert!
