1/4 cup coconut oil, melted

1 teaspoon pure vanilla extract

3/4 cup fresh or frozen blueberries

1 cup plain Greek yogurt

1 tablespoon honey (optional, for yogurt sweetening)

1/4 cup mini chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Base Mixture: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, salt, and cinnamon. Mix until evenly combined.

      Add Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth. Pour this mixture into the dry ingredients, stirring until just combined.

        Fold in Blueberries: Gently fold in the blueberries, being careful not to crush them. If you’re adding chocolate chips, fold them in as well.

          Form Cookie Bites: Using a tablespoon or a small cookie scoop, drop heaping tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie bite slightly with the back of a spoon.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
