Ingredients

For the Donut Rings:

1 cup whole wheat flour

1/2 cup rolled oats

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup non-fat Greek yogurt

1/4 cup almond milk (or regular milk, as preferred)

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

For the Frozen Yogurt Topping:

2 cups Greek yogurt (vanilla or plain)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Optional: Fresh fruits like berries or bananas for topping

For the Granola Coating:

1 cup granola (store-bought or homemade)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1 tablespoon chia seeds (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray or use silicone molds.

Make the Dough: In a large bowl, combine the whole wheat flour, rolled oats, brown sugar, baking powder, baking soda, salt, and cinnamon. Mix well to combine.

Mix Wet Ingredients: In another bowl, whisk together the Greek yogurt, almond milk, melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing.

Fill the Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full. You can also use a piping bag for a neater process.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden and a toothpick inserted comes out clean. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack.

Prepare the Frozen Yogurt: In a bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth. Spread the mixture into a shallow dish and freeze for at least 2-3 hours or until firm.

Coat the Donuts: Once the frozen yogurt is set and the donut rings are completely cool, take the yogurt out of the freezer and scoop a generous amount onto each donut, spreading it evenly.

Add Granola Topping: While the yogurt is still soft, sprinkle granola, chopped nuts, and chia seeds on top to coat the yogurt layer.

Finish Freezing: Return the topped donuts to the freezer for about 1 hour to allow the yogurt to firm up completely.

Serve: Remove from the freezer and let sit for 5-10 minutes at room temperature before serving for a softer bite. Top with fresh fruits if desired and enjoy your delightful, healthy treat!
