2 cups plain Greek yogurt

1/4 cup honey or maple syrup

Zest of 2 lemons

1/2 cup freshly squeezed lemon juice

1/4 cup chia seeds

1 teaspoon pure vanilla extract

Pinch of salt

Fresh mint leaves (for garnish, optional)

Lemon slices (for garnish, optional)

Instructions
 

In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Whisk together until smooth and well combined.

    Add the chia seeds into the yogurt mixture and stir well to ensure they are evenly distributed.

      Let the mixture sit for about 10 minutes to allow the chia seeds to absorb some liquid and thicken. Stir again to break up any clumps of chia seeds.

        During this time, prepare your serving cups or containers. You can use small jars, dessert cups, or silicone molds.

          Spoon the chia lemon yogurt mixture into the prepared cups, filling them about three-quarters full.

            Cover the cups with plastic wrap or lids, and place them in the freezer. Freeze for at least 4 hours, or until fully set and firm.

              To serve, remove the cups from the freezer and let them sit at room temperature for about 5-10 minutes to soften slightly before enjoying.

                Garnish with fresh mint leaves and a slice of lemon on top for an extra touch of flavor and presentation.
