1 cup plain Greek yogurt

1/4 cup honey or maple syrup

Zest of 2 lemons

1/4 cup freshly squeezed lemon juice

1/4 cup chia seeds

1/2 teaspoon vanilla extract

Pinch of salt

1 cup granola (for topping, optional)

Fresh berries for garnish (optional)

Instructions
 

Prepare the Mixture: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix well until smooth and creamy.

    Add Chia Seeds: Stir in the chia seeds to the yogurt mixture. Ensure they are evenly distributed throughout.

      Set Up for Freezing: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour the yogurt and chia mixture into the dish, smoothing the top with a spatula.
