1 1/2 cups rolled oats

1/2 cup almond flour

1/4 cup coconut sugar (or brown sugar)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup low-fat yogurt (plain or flavored)

1/2 cup dark chocolate chips (or dried fruit for a healthier option)

Optional: chopped nuts (walnuts or almonds) for added crunch

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, and salt. Mix well until evenly distributed.

      Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, yogurt, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until a dough forms. If you're adding chocolate chips or nuts, fold them into the dough now.

          Shape Discs: Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet. Flatten each scoop into a disc shape, about 1/2 inch thick, as they won’t spread during baking.

            Bake: Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. Keep an eye on them to avoid over-baking.

              Cool Completely: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely.

                Freeze: Once cooled, place the cookie discs in an airtight container or zip-top bag and freeze them for at least 1 hour to have a refreshing frozen treat.
