2 cups plain Greek yogurt

1 cup pure pumpkin puree (not pie filling)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

Optional toppings: crushed graham crackers, chopped walnuts, or a drizzle of caramel sauce

Instructions
 

In a large mixing bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), vanilla extract, pumpkin pie spice, cinnamon, nutmeg, and salt. Stir until the mixture is smooth and well-combined.

    Taste the mixture and adjust the sweetness, adding more honey or maple syrup if desired.

      Prepare a baking dish (approximately 9x5 inches) by lining it with parchment paper. This will prevent the yogurt from sticking.

        Pour the pumpkin yogurt mixture into the prepared baking dish, spreading it evenly with a spatula.

          Place the dish in the freezer and allow it to freeze for about 4 to 6 hours, or until the mixture is firm.

            Once frozen, remove the dish from the freezer and let it sit for about 5 minutes at room temperature to make slicing easier.

              Using a sharp knife, cut the frozen yogurt into wedges or bars. You can make them as big or small as you like.

                If desired, sprinkle with crushed graham crackers, chopped walnuts, or drizzle with caramel sauce before serving.

                  Serve immediately or return the wedges to the freezer in an airtight container for later enjoyment!
