1 lb (450g) fresh mushrooms (preferably cremini or button)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Optional: 1 tablespoon balsamic vinegar for extra flavor

Preheat the oven to 400°F (200°C).

    Prepare the mushrooms: Clean the mushrooms with a damp cloth and pat dry. If they are large, you can slice them in half or quarters, but keep smaller ones whole.

      Melt the butter: In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

        Mix the seasonings: In a large bowl, combine the melted garlic butter, olive oil, thyme, salt, and pepper. If using balsamic vinegar, add it to the mixture as well.

          Toss the mushrooms: Add the prepared mushrooms to the bowl and toss them well to coat evenly with the garlic butter mixture.

            Arrange on a baking sheet: Spread the mushrooms out in a single layer on a baking sheet lined with parchment paper for easy cleanup.

              Roast in the oven: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the mushrooms are tender and browned, giving them a gentle toss halfway through.
