Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups vegetable broth (or water)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

½ teaspoon paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 green onions, sliced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the Rice: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the jasmine rice, cover, and lower the heat to a simmer. Cook for about 15 minutes or until the rice is tender and has absorbed all the liquid. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare the Shrimp: While the rice is cooking, season the shrimp with salt, pepper, and paprika. This will enhance their flavor and give them a slight kick.

Make the Garlic Butter: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

Cook the Shrimp: Increase the heat to medium-high, then add the seasoned shrimp to the skillet. Cook for 2-3 minutes on one side until they turn pink and begin to curl, then flip and cook for an additional 1-2 minutes on the other side.

Add Flavor Enhancements: Once the shrimp are cooked through, stir in the lemon juice, lemon zest, and red pepper flakes (if using). Mix well, ensuring the shrimp are coated with the garlic butter.

Assemble the Bowls: To serve, divide the fluffy jasmine rice among the bowls. Top each bowl with the garlic butter shrimp, ensuring an even distribution of sauce.

Garnish: Sprinkle sliced green onions and fresh parsley over the shrimp. Serve with lemon wedges for a fresh squeeze of citrus.
