Garlic Roasted Chickpea Snack Mix

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional for heat)

1 cup mixed nuts (almonds, cashews, walnuts)

1/2 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: After rinsing the chickpeas, spread them out on a clean kitchen towel and pat them dry. This helps them get crispy in the oven.

      Season Chickpeas: In a mixing bowl, combine chickpeas, olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and cayenne pepper (if using). Toss until well-coated.

        Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast for 20-25 minutes, shaking the pan halfway through, until they are golden brown and crunchy.

          Prepare Nuts and Seeds: While the chickpeas roast, mix the mixed nuts and pumpkin seeds in another bowl with a drizzle of olive oil and a pinch of salt.

            Combine & Bake: After the chickpeas are done, reduce the oven temperature to 350°F (175°C). Add the nut and seed mixture to the baking sheet with the chickpeas and toast everything in the oven for an additional 10 minutes.

              Add Dried Fruit: Once toasted, remove the mixture from the oven and let it cool slightly. Stir in the dried cranberries or raisins while the mix is still a bit warm.
