4 large portobello mushrooms, stems removed

1 cup grated Parmesan cheese

1 cup breadcrumbs (Italian seasoned or plain)

1/2 cup all-purpose flour

2 large eggs

2 tablespoons olive oil (for frying)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

4 whole grain burger buns

1 cup fresh spinach or lettuce

1 large tomato, sliced

1 avocado, sliced (optional)

1/4 cup pesto or aioli (optional, for spreading)

Instructions
 

Prepare the Mushrooms: Preheat your oven to 400°F (200°C). Clean the portobello mushrooms with a damp cloth and remove the stems gently. Pat them dry with a paper towel.

    Set up your Breading Station: In three separate bowls, place the all-purpose flour in the first bowl. In the second bowl, whisk together the eggs until well blended. In the third bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, salt, and pepper.

      Bread the Mushrooms: Dip each portobello mushroom in the flour, ensuring it’s coated evenly. Shake off any excess flour. Next, dip it into the beaten eggs, allowing any excess to drip off, and finally, coat the mushroom in the Parmesan-breadcrumb mixture, pressing gently to ensure an even crust forms.

        Cook the Mushrooms: In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded mushrooms, stem side down, and cook for about 3-4 minutes until golden brown and crispy. Carefully flip the mushrooms and cook for another 3-4 minutes on the other side.

          Bake for Extra Crispiness: Transfer the browned mushrooms to a baking sheet lined with parchment paper. Bake them in the preheated oven for about 10-12 minutes until they’re fully cooked through and the crust is crispy.

            Assemble the Burgers: Toast the whole grain burger buns lightly. Spread a layer of pesto or aioli on the bottom half of each bun. Layer with fresh spinach or lettuce, followed by a sliced portobello mushroom, slices of tomato, and avocado if desired. Top with the other half of the bun.
