Green Chili Pasta Shells with Cheese

12 oz jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 can (4 oz) diced green chilies, drained

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon olive oil

1 cup marinara sauce

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, fresh spinach, ¾ cup of the shredded mozzarella cheese, grated Parmesan cheese, diced green chilies, minced garlic, ground cumin, salt, and black pepper. Mix until well combined.

      Stuff the Shells: Preheat your oven to 375°F (190°C). Using a spoon, generously stuff each cooked pasta shell with the cheese filling mixture. Place the stuffed shells in a greased 9x13-inch baking dish.

        Add Marinara Sauce: Once all the shells are stuffed, evenly pour the marinara sauce over the top of the shells, ensuring they are well coated.

          Top with Cheese: Sprinkle the remaining ¼ cup of shredded mozzarella cheese over the marinara sauce to create a cheesy topping.

            Bake: Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.
