Green Chili Veggie Egg Rolls

1 cup shredded cabbage

1 cup shredded carrots

1 cup bean sprouts

1/2 cup finely chopped green bell pepper

1/2 cup finely chopped green onions

2 tablespoons finely chopped fresh cilantro

2-3 green chilies, finely chopped (adjust to taste)

2 teaspoons soy sauce

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

1 package of egg roll wrappers

Oil for frying

Prepare the Filling: In a large mixing bowl, combine shredded cabbage, shredded carrots, bean sprouts, green bell pepper, green onions, cilantro, green chilies, soy sauce, garlic powder, ginger powder, salt, and pepper. Mix well until all vegetables are evenly coated.

    Wrap the Egg Rolls: Lay an egg roll wrapper on a flat surface, with one corner pointing towards you. Spoon about 2 tablespoons of the veggie filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, encasing the filling. Roll tightly toward the top corner and seal with a little water. Repeat with remaining filling and wrappers.

      Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat. To test if the oil is ready, drop a small piece of dough into the oil; it should sizzle immediately.

        Fry the Egg Rolls: Carefully add a few egg rolls to the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 3-4 minutes per side. Use a slotted spoon to transfer the fried egg rolls to a plate lined with paper towels to drain excess oil.

          Serve: Serve the hot egg rolls with your choice of dipping sauce, such as sweet chili sauce or soy sauce.
