12 oz penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil (for chicken)

Salt and pepper, to taste

1 teaspoon Italian seasoning

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 tablespoon balsamic vinegar

1/2 cup fresh mozzarella balls, halved

Freshly grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with olive oil, salt, pepper, and Italian seasoning. Let it marinate for about 10 minutes.

      Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing into strips.

        Make the Bruschetta Topping: In a medium bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, 1 tablespoon of olive oil, and a pinch of salt and pepper. Mix well and let it sit for about 10 minutes to allow the flavors to meld.

          Combine Pasta and Chicken: In a large mixing bowl, combine the cooked pasta with the bruschetta mixture. Add in reserved pasta water a little at a time, until you reach your desired sauciness (about 1/4 cup should do). Toss in the sliced grilled chicken and fresh mozzarella balls. Mix until everything is well combined.

            Serve: Plate the pasta and chicken mixture, drizzle with extra olive oil if desired, and sprinkle generously with freshly grated Parmesan cheese. Garnish with additional basil leaves if you like.
