Ingredients

2 boneless, skinless chicken breasts

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

6 cups mixed salad greens (e.g., romaine, spinach, arugula)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1 cup crumbled blue cheese

4 slices of cooked bacon, chopped

4 hard-boiled eggs, peeled and quartered

½ cup red onion, thinly sliced

½ cup balsamic vinaigrette (store-bought or homemade)

Instructions

Prepare the Chicken: Preheat your grill to medium-high heat. In a small bowl, mix together smoked paprika, garlic powder, salt, and pepper. Rub the spice mixture over the chicken breasts until evenly coated.

Grill the Chicken: Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Assemble the Salad Base: In a large salad bowl, layer the mixed salad greens as the base.

Add Toppings: Arrange the cherry tomatoes, diced avocado, crumbled blue cheese, chopped bacon, quartered hard-boiled eggs, and sliced red onion on top of the salad greens.

Slice the Chicken: Cut the grilled chicken into strips and place on top of the salad.

Dress the Salad: Drizzle the balsamic vinaigrette over the salad just before serving. Toss gently to combine or serve with the dressing on the side.

Serve: Enjoy your Grilled Chicken Cobb Salad immediately for a refreshing, protein-packed meal!
