4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon smoked paprika

For the Peach Salsa:

2 ripe peaches, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Salmon:

    - In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and smoked paprika.

      - Coat the salmon fillets with the marinade and let them sit for at least 15-30 minutes while you prepare the salsa.

        Prepare the Peach Salsa:

          - In a medium bowl, combine the diced peaches, chopped red onion, minced jalapeño, and cilantro.
