1 medium head of cauliflower, cut into florets

1 cup Greek yogurt (plain)

1 cup shredded low-fat cheddar cheese (plus extra for topping)

1/2 cup cooked turkey bacon, chopped (or regular bacon for a richer flavor)

1/2 cup green onions, sliced

1/2 cup milk (dairy or non-dairy)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Air Fryer: Set your air fryer to 400°F (200°C) to preheat while you prepare the casserole mix.

    Prepare the Cauliflower: In a large pot of boiling salted water, add the cauliflower florets and cook for about 5 minutes, or until tender. Drain and set aside.

      Mix the Sauce: In a large mixing bowl, combine the Greek yogurt, milk, minced garlic, onion powder, paprika, salt, and pepper. Whisk until well combined.

        Combine Ingredients: Add the cooked cauliflower, chopped turkey bacon, shredded cheddar cheese, and green onions to the bowl. Stir everything together until the cauliflower is well-coated with the sauce.

          Transfer to Air Fryer: Lightly grease the air fryer basket with cooking spray. Pour the cauliflower mixture into the basket, spreading it evenly.

            Air Fry the Casserole: Cook in the air fryer at 400°F (200°C) for 12-15 minutes, or until the top is golden and crispy. About halfway through cooking, sprinkle extra cheese on top for a melty finish.
